Also, whenever I'm down there I'm always hanging with the locals so to do the touristy thing would be nice.

Regarding restaurant food being bad for you - there are two main reasons: salt and fat. I think that they are the two cheapest ingredients used in commercial kitchens to make food taste good (at least to the undiscriminating diner).

Just been the supermarket and bought the ingredients for a Ratatouille, will make it in the next few days.
Its pretty much a vegetable stew. Works well as a snack type food or is great with a piece of meat and some rice as a main meal.
Make a big old pot of it and have portions throughout the week.
Piles of veggies and good stuff, low on the calories. Thats what we are about no?

What Delia says about prepping the aubergine and courgette (egg plant and zuccinni you saps) is pretty important. A veggie full of water takes ages to fry, soaks up loads of oil and becomes a mush slop. So do the thing where you suck the water out with salt, then pad it dry on kitchen paper.

Ill add a generous splash of wine (red or white) and the obligatory chilli.

Just pulled this off some BBC recipe and reckon ill go for it, bang in some of what you like innit!

"Make it your own

Give the dish a Moroccan twist by frying the onions with 2 tsp harissa paste and stirring in 400g can chickpeas, drained. For a more intense Mediterranean flavour, add 1 tbsp capers, a handful of pitted black olives and a few chopped anchovies. Make it your own Spoon into a gratin dish, sprinkle with crumbs from 2 slices bread and a handful grated parmesan. Drizzle with olive oil and grill until golden. Make it your own Add a deseeded and finely chopped chilli with the garlic for an extra kick.

doesn't look that good to me but it's the kind of thing I need to be eating now. Make it nice and spicy n zingy and I could go for it. could have it for lunch wit a bit of toasted pitta maybe.

^^^Yeah, bang in some curry power/paprika/chilli, if you like spicy tomatoes thats pretty much it. I have it with bread or something.

Just looked up harissa, may have to make that, not sure how id eat it though.

Im gonna make some salsa and guacamole this week and dip away. Any top tips?

Veggies suck! With the exception of corn, carrots, potatoes, green beans and broccili. Those are the only ones I'll eat. If you want to keep the weight off, just eat chicken all the time with the above veggies mixed in. Keep the meats lean and exercise, thats all you need to do. I also eat fast food like once or twice a week, no big deal as long as you dont overindulge and order the super massive combos they want to peddle you.

Pizza once a week, stacked with sausage, pepperoni, meatballs and peppers is healthy too. Yep, my diet is the model of healthy eating.

It's a Moroccan vegetable/meat soup with some chili. I prefer the Russian kitchen for soups to any of those fancy southern-kitchen ones.

I like most veg. Lightly steamed broccoli is great. Don't fancy corn that much though.

Oh ya, great way to make eggplant unhealth. slice it vertically so it looks like a bunch of hockey pucks. Fry it up. Lightly salt it and top it with Wasabi.

Ratatouille was the bomb. Banged in a tin of chick peas, a hand full of olives, plenty of chilli and some paprika.
Had about three portions a day.
